One-Pot Chicken Thighs Featuring Butternut & Sweet Potato Chef Veggie Starter

Serving Size: 4 servings



  • 4 chicken thighs
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 3 cups Butternut & Sweet Potato Chef Veggie Starter
  • 1 cup Japanese bread crumbs
  • Parsley to garnish



Preheat oven to 400°F. Season chicken thighs with garlic powder, salt and pepper. Mix Butternut & Sweet Potato Chef Veggie Starter with bread crumbs. Season with salt and pepper. In a roasting pan place starter mixture on the bottom of the pan. Place chicken thighs on top of the starter mixture. Cover and bake in a pre-heated oven for 45-60 minutes, until the internal temperature is 165°F. Uncover and broil for 5-10 minutes to brown the top of the chicken thighs, watch carefully. Garnish with parsley and enjoy!
